Granola topped on greek yoghurt is one of my favourite ways to start the day. I don’t like the store bought granola because it is usually loaded with refined sugar (even if they are advertised as healthy or organic). I always load my granola with plenty of nourishing nuts and seeds, and use only 100% maple syrup or manuka honey to sweeten. I actually look forward to waking up and eating this delicious concoction. The best thing about it is you can use oats or buckwheat groats as the base and chuck in whatever else you have in the pantry. Get as creative as you like! Makes 5-6 servings // 10 mins prep // Cooking time 30-45 min
Ingredients
- 1.5 cups rolled oats
- 1/3 cup goji berries
- 1/3 cup cashews
- 1/8 cup pumpkin seeds (pepitas)
- 1/8 cup sunflower seeds
- 1/3 cup desiccated coconut
- 1/4 cup chia seeds
- 1/3 cup coconut oil
- 1/4 cup sesame seeds
- 1 punnet strawberries, roughly chopped
- 2 tbsp maple syrup
Method
- Heat your oven to 160C.
- Combine all your dry ingredients into a big bowl.
- In a saucepan, melt the coconut oil and maple syrup.
- Combine the coconut oil&maple syrup mixture with the dry ingredients and give it a good mix!
- Spread out onto baking paper on an oven tray and pop in the oven.
