Coconut Pear Loaf

I saw a tray of luscious looking pears the other week at the farmers market and decided I just needed to try and bake something with them. These soft flavoursome pears were the perfect seasonal fruit to team with the rich coconut base of this loaf. You will have seen on our Instagram and Facebook photos that I have been enjoying this lately crumbled atop my breakfast yoghurt with my Strawberry Superfood Granola. This Coconut Pear Loaf is best enjoyed with a cup of tea and in good company =) Happy Sunday!

Makes 10 slices // 15 mins prep // Cooking time 1 hour 30 min

Ingredients

  • 1 cup coconut flour
  • 2 tbsp chia seeds
  • 1/4 cup pumpkin seeds (pepitas)
  • 1/4 cup sunflower seeds
  • 1/4 cup linseeds
  • 2 tsp baking powder
  • 2 free-range eggs
  • 1 cup organic apple puree
  • 1/4 cup coconut oil, melted
  • 1 tsp cinnamon
  • 2 tsp pure vanilla extract
  • 2 pears, diced
  • 1 cup almond milk (or any other nut milk)

Method

  1. Preheat oven to 180C.
  2. Mix the coconut flour (or any other flour you like, such as oat flour, spelt flour) with all the dry ingredients except the linseeds (we are going to press these on top of the loaf).
  3. In a second bowl, whisk the 2 eggs, then stir in the melted coconut oil, vanilla extract and apple puree.
  4. Mix the wet ingredients into the first bowl with the dry ingredients.
  5. Fold through the diced pear.
  6. Add as much almond milk as you need to make the mixture a little smoother – not too batter-like though! I found I had to use around a cup of almond milk because coconut flour loooves  sponging up the liquid. Using other flours such as oat or spelt, you might find you don’t need to add any liquid. If you don’t have almond milk, any other nut milk will be fine.
  7. Spoon the mixture into a lined loaf pan, press linseeds on top and pop into the oven for around an hour and a half.
  8. Enjoy topped with generous servings or a nut butter of your choice and a cup of tea!
