You only need 20 minutes to throw this delicious concoction together, and it freezes well too for those times you’re running behind! I made these for Jen one night for dinner and she absolutely loved them!
Ingredients
3 cobs of corn kernels
1/2 red onion diced
1 cup coriander chopped
1 cup quinoa flour
1 teaspoon bicarb
3 eggs
Dash of milk or water
Salt and pepper to season
Method
1. Combine all ingredients in a bowl, mixing well.
2. Preheat oven to 160d C.
3. Lightly pan fry tablespoon sized fritters until crispy and golden.
4. Place in oven to cook centre (approximately 3-5mins).
5. Serve with guacamole, balsamic roasted cherry tomatoes, spinach, mint and goats cheese. Smoked salmon goes well too.
